A paella pan is large enough with relatively low sides so that you can first fry your chorizo, pancetta, garlic, peppers and onion before then coating the rice in all these juices and adding the rest. The Le Creuset Cast Iron Paella Pan, with its black interior, can withstand very high heat but I recommend you start on low to medium high temperature, and increase the heat if needed. Remember
