Here that means vines planted back in 1928, farmed in one of Gevrey's coolest, highest sites a notch in the hillside where cold air pours down and keeps the fruit taut and fresh. His cellar work is famously hands off: no fining, no filtration, barely any new oak, and almost no sulfur, relying instead on a
